Catalan cold cuts in Vol de Coloms

In La Garrotxa, talking about cold cuts is talking about history, culture and identity. In this rural region, the production of cold cuts has been, for centuries, an important part of the domestic economy. A single pig fed a family for the whole year. Making sausages was the most efficient way to preserve meat. The technique was simple: filling the animal’s gut with minced meat and fat, seasoned with salt, spices and, in some cases, other ingredients, and then letting them cure, cook or dry depending on the type of product.

Every farmhouse had its own cold cuts

Traditionally, in every farmhouse in La Garrotxa, pigs were raised, slaughtered and sausages were made following the knowledge passed down by grandparents, aunts or the women of the house, who were often the ones who kept the secrets. The amount of salt, the amount of pepper, the curing time, the cut of meat, the proportion of fat, or even the size of the pieces… Every detail varied slightly from one house to another.

Each type of cold cuts were made everywhere, but the result was never exactly the same. Each farmhouse gave its sausages their own character, which gave them a unique and unrepeatable taste.

From farms to butchers: a tradition that continues

Nowadays, home slaughter is no longer allowed, but the tradition is kept alive thanks to the small producers and artisans of La Garrotxa who continue to make cold cuts as they have always been made. In every town there are butchers who make their own sausages, using family recipes and local produce. There are even producers who raise their own pigs. This way they guarantee total control of the process, from the beginning to the final product.
